Pearl millet milled into a grey-beige flour with a nutty, slightly bitter edge that comes forward when it is cooked.
The winter roti flour of western India, usually eaten hot off the tawa with white butter or jaggery. Bajra flour does not keep as long as wheat once ground, so it is milled in small lots.
Keep in an airtight container away from heat. Best used within two months of opening.
