Khapli, the emmer wheat grown in parts of Maharashtra and Gujarat, stone-ground into a coarse golden-brown flour.
Khapli is a wheat, not a millet, and it does contain gluten — it is sold alongside the millets because it is an ancient grain, not because it is gluten-free. It makes a chewier, heavier roti than ordinary atta.
Keep in an airtight container away from heat. Use within three months of opening.
