The smallest of the common millets, pale and fine, cooking faster than the rest.
Ready in roughly fifteen minutes and soft enough for khichdi, idli batter or a simple lemon rice in place of rice. Rinse before cooking.
Keep in an airtight container in a cool, dry place.
