Finger millet ground whole, bran and all, into a fine rust-brown flour with the faintly earthy smell ragi is known for.
Ragi rotis need warm water and a little patience — the dough has no gluten to hold it together, so it is patted out by hand rather than rolled. It also thickens porridge and ragi malt well.
Keep in an airtight container away from heat. Use within three months of opening.
