Barnyard millet, the pale round grain kept for fasting days across much of north India.
Cooks quickly and loosely, which suits it to vrat khichdi and sanwa kheer. It swells more than it looks like it should, so start with less water than you expect.
Keep in an airtight container in a cool, dry place.
