How to store atta
Stone-ground flour still has the germ in it, and the germ has oil, which is exactly why it tastes better and exactly why it does not keep forever. Move it into an airtight container the day it arrives, keep it out of the sun, and use it within a couple of months.
What “stone-ground” means
A stone chakki turns slowly, so the grain never heats enough to drive off its aroma, and the bran and germ stay in the flour instead of being sieved out. Roller mills are faster and run hotter. You can taste the difference in a plain roti.
Reading our labels
Every food listing carries its net quantity, who packed it, the country of origin, the best-before window and the veg mark, taken from the pack itself. Where a field is blank we have left it blank rather than guessing.
